The BBQ Song

Hat tip to Cousin Kyle, card-carrying member of the NC BBQ Society.

Hot and sweet and red and greasy,

I could eat a gallon easy:
Barbecue sauce!
Lay it on, hoss.

Brush it on chicken, slosh it on pork,
Eat it with fingers, not with a fork.
I could eat barbecued turtle or squash --
I could eat tar paper cooked and awash
In barbecue sauce.

I’d eat Spanish moss
With barbecue sauce.

- Roy Blount, Jr.
“Song to Barbecue Sauce” from One Fell Soup, 1982

So beautiful! That put tears in my eyes, man. They got the Memphis part wrong though... I think wet ribs are way more popular here than dry. And pulled pork is king.

Yeah--it's one for the ages, NVT. As an Alabamian I'll cut them NC boys some slack on their BBQgeography, as I can't say we have much of that white sauce where I'm from.
